Sparkling wine has a significant level of carbon dioxide, making it bubble when served. Carbon dioxide results from natural fermentation, whether it is made inside the bottle (Method champenoise) or outside it (Method Charmat). CO2 bubbles that form during service are called perlage. In some parts of the world the word champagne is used as a synonym for sparkling wine, which is even prohibited by some legislation.
